Hi Davinder Singh, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
The journey of Jalwa Indian Bistro began with a simple observation: Raleigh’s rapid growth was creating a demand for more diverse and sophisticated dining experiences. As the city is evolving, we notice a gap in the market for creative and progressive Indian cuisine.
We saw an opportunity to introduce something truly unique – an Indian restaurant that could offer not just exceptional food, but a complete dining experience that would justify the customer’s spending. Raleigh, with its growing population and lack of high-end Indian dining options, seemed like the perfect location for our vision.
Our goal was to create a space where traditional Indian flavors could meet modern & artistic culinary techniques, all in an atmosphere that exuded elegance and warmth. We wanted to challenge the perception of Indian food as just curry and naan, and showcase the incredible diversity and sophistication of India’s culinary heritage.
Chef Mukesh Gautam will play a pivotal role, bringing his extensive experience and innovative approach to modern Indian cuisine. With over 20 years in the culinary industry, Chef Gautam is known for his passion for crafting extraordinary dining experiences that blend traditional Indian flavors with innovative techniques.
By focusing on quality, creativity, presentation and a welcoming atmosphere, Jalwa Indian Bistro is set to become a dining destination that reflects both the vibrant culture of India and the dynamic spirit of Raleigh. We can’t wait to share this journey with our guests!

The journey to opening Jalwa Indian Bistro has definitely had its challenges, but each struggle has contributed to our growth and resilience. Like any new venture, we faced hurdles such as navigating the complexities of restaurant regulations, sourcing high-quality ingredients, and creating a cohesive team that shares our vision.
One significant challenge was finding the right location that aligned with our concept. North Raleigh was the ideal spot for us, but securing a space that met our needs was a process that required patience and perseverance.
Additionally, developing a menu that reflects both authenticity and innovation took time and collaboration. The team has worked tirelessly to ensure that every dish not only honors traditional flavors but also introduces exciting new elements.
Despite these challenges, we remained focused on our mission to create an elevated dining experience. Each obstacle has taught us valuable lessons and strengthened our commitment to providing exceptional food and service. Ultimately, these experiences have made the journey all the more rewarding, and we are excited to share what we’ve built with the community!
What were you like growing up?
Growing up, I was always curious and eager to learn about the world around me. While I didn’t have a strong background in cooking, I was fascinated by the culinary arts and the way food brings people together. My personality was outgoing and social; I loved spending time with friends and family, often enjoying meals prepared by others.
I had a keen interest in exploring different cultures, which extended to their cuisines. I would often accompany family members to various restaurants, absorbing the atmosphere and appreciating the diverse flavors. This sparked my desire to create a space where people could come together to enjoy exceptional food and connect with one another.
