Rising Stars: Meet Ashley Knight of Wake Forest

Today we’d like to introduce you to Ashley Knight

Hi Ashley, thanks for joining us today. We’d love for you to start by introducing yourself.
Myself & Tamrish (Partner) always loved to entertain and would regularly invite our friends over for food and cocktails. Together we realized we had a passion for cooking and fellowship over a wide range of delicious food. Beginning 2016 we decided to try our hand at lunch delivery. We got a great bit of local business. Once people began to purchase our plates, we were then asked.. “ Do you all cater”. At this point, we decided, let’s go ahead and take this seriously! We realized this could be a lucrative business, as well as an opportunity to do what we enjoyed.
After some minor set backs and losing a few family members, we continued to network and perfect our craft. We maximized our ability to create a new product “family meals” through Covid. As soon as we were able to be properly obtain our state credentials; We became Phillips Humble Catering LLC. (Humble Catering) In 2022 we were official permitted caterers.
There is much work to do, and many heights we intend to climb in this business. We are incredibly proud of how far we come. We are getting the event clientele that we’ve worked so hard to appeal to. Incorporating a much more decorative, lux approach to our buffets; all while serving delicious quality

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
We’ve had obstacles like most minority small business. Learning the business and building relationships doesn’t happen overnight. Additionally, we built the business out of love for the art; No real educational background. As you can imagine learning as you go, comes with some additional roadblocks. We’ve had to be parents, overcome the loss of family members and friends, financial struggles, Covid, Health issues and etc.
I (Ashley) am a brain tumor survivor and while from the outside looking in, it looks easy; It is often a daily struggle to combat muscle & nerve pain. With effective planning and preparation we make it happen.
