Hi Alazá, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
Growing up, I was always creative, though I didn’t quite know where that creativity would take me. My mind was constantly wandering, lost in daydreams of color, shapes, and ideas. I would doodle on my school desk, turning blank surfaces into canvases, much to my teachers’ frustration. While others followed structured paths, I felt drawn to something different—something artistic, something hands-on. I just didn’t know what it was yet.

My journey truly began when I got my first job—as a dishwasher at a local bakery. It wasn’t glamorous, but it placed me in an environment bursting with sugar, butter, and possibility. While scrubbing pans and stacking dishes, I watched the bakers work, mesmerized by the way they transformed simple ingredients into edible art. One day, I picked up an icing bag, and everything changed.

At first, it was just playful curiosity, piping swirls onto parchment paper whenever I had a free moment. But soon, that small act of experimentation turned into a passion. I loved the way buttercream flowed through my hands, the endless possibilities of colors and textures. That’s when I knew—I wanted to be a cake decorator.

Determined to turn this newfound passion into a career, I enrolled in community college for Applied Science of Baking and Pastry Arts. It was there that I truly fell in love with baking. I wasn’t just learning recipes—I was discovering the science behind them. The precision, the chemistry, the artistry—it all clicked. Baking wasn’t just about following steps; it was about understanding reactions, experimenting with flavors, and pushing creative boundaries.

After years of learning, growing, and refining my craft, I knew it was time to create something of my own—something that combined my love for art, science, and innovation. That’s how Bakeology Sugar Lab was born. More than just a bakery, Bakeology is a place where desserts become experiments, where flavors surprise, and where customers are invited to play with their food. It’s the result of a journey that started with doodles, daydreams, and an icing bag in a dish room.

Looking back, every moment—every scribbled drawing, every daydream, every dish washed—led me here. And now, I get to bring that same sense of wonder and creativity to life, one dessert at a time.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It hasn’t always been a smooth road. Like any journey worth taking, mine has been filled with twists, turns, and unexpected discoveries. I started out as Zálery’s Cake Studio, focused solely on cake decorating. At the time, all I wanted was to create beautiful cakes—to turn blank tiers into edible art. But as I spent more time in the baking industry, something shifted.

I found myself falling deeper in love with the art of baking itself—not just decorating, but the science, the textures, the process of creating something entirely new. I became fascinated by Korean desserts, drawn to their delicate techniques and elegant simplicity. At the same time, I was inspired by science labs, where experimentation leads to discovery. That’s when I realized: I didn’t just want to decorate cakes—I wanted to innovate, to push boundaries, to play with flavors, textures, and unexpected elements.

The transition wasn’t easy. There were plenty of ups and downs, moments of doubt, and countless failed experiments. But every challenge brought me closer to what I truly wanted to create. That’s how Bakeology Sugar Lab was born—a place where science meets sweets, where desserts are more than just food, but an experience.

This journey is still unfolding, and I know there are more obstacles ahead. But that’s the beauty of it. With every challenge comes an opportunity to create something new, something exciting, something that keeps me—and my sugar scientist community—on the edge of discovery. And that’s exactly what I plan to do.

We’ve been impressed with Bakeology Sugar Lab , but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
At Bakeology Sugar Lab, we believe that desserts should be more than just delicious—they should be an experience. We are a science-inspired bakery that blends the art of baking with the magic of chemistry, creating innovative, interactive, and visually stunning treats. With our slogan, “Play with your desserts,” we invite customers to engage with our creations in a way they’ve never seen before.
What We Do & Specialize In
We specialize in experimental desserts that challenge traditional baking. Using molecular gastronomy, interactive elements, and unexpected flavors, we craft edible art that surprises and delights. Our menu is ever-evolving, featuring color-changing glazes, smoke-infused pastries, glow-in-the-dark treats, and unique flavor fusions inspired by both science labs and modern pastry techniques.
Some of our standout creations include:
• Vanilla Volume Cupcakes — vanilla cupcake filled with a vanilla nuclear pastry cream and vanilla buttercream icing garnished with a green crystal rock candy and our radioactive sparkle dust
• Cryo Gel – ice cream gel (we scientifically altered the text of the ice cream to gel form to create a new, fun, and innovative experience!
• Drink Pods – we created a fizzy drink pod by creating a flavorful co2 pod that will activate inside on any drink you add it to
• Petri Pops – Petri Dish inspired lolly pops with unique flavors to guess
• Bio coffeeistry cupcakes — chocolate buttermilk cupcake filled with whipped cream and a espresso mocha buttercream garnished with lab made caramel drizzle and coffee caviar
