Today we’d like to introduce you to Phillip Jones III.
Phillip, we appreciate you taking the time to share your story with us today. Where does your story begin?
I began baking and cooking as a small child in the kitchen with my family. It is something that I was always naturally drawn to, and that just progressed as life went on. I decided to go to culinary school and then pastry school all while working in the industry. Eventually, I became a baking and pastry arts instructor, and I decided to make my dream a reality. I opened the Jelly Cabinet Bakery about three years into that. It has been nothing less than a thrill!
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It has not been a smooth road just because I have never ran my own establishment before. I have had managerial experience, kitchen experience, & bakery experience through my career so I had an idea of how things worked. However, when it is your own business, it is a totally different totally league. My biggest challenge was really getting footing on how much stuff I should be prepping, what I should be selling etc. Common obstacles you would run into in the food industry. I’ve also struggled with reminding myself that I’m doing this for my own fulfillment…so I need to keep it fun!

The Jelly Cabinet Bakery was established in July 2023. It is located in Wilmington, North Carolina, where I was born and raised. The name originated from a cabinet that my grandmother had in her kitchen, filled with baking ingredients. I can remember going back-and-forth from the jelly cabinet to gather everything we needed for baking. I thought that this would be the perfect ode to name the bakery after that. I am most known for my cinnamon rolls and southern style biscuits that I offer in different flavors such as cheddar and scallion along with wild blueberry. I do a lot of baking with cornmeal to show appreciation for my southern heritage and get creative with specials every weekend, I feel like all of these aspects set me apart from others. I love experimenting with flavors and textures that are from the south because it allows me to be creative and to open people’s pallets to experience food with intention.
Is there something surprising that you feel even people who know you might not know about?
Something surprising people wouldn’t know about me or I think they wouldn’t know about me would be that I’m hilarious. I feel like at times I can come off as reserved or quiet but once I get to know someone that is not the case! Also I am one of the world’s biggest Beyoncé fans!
