Meet Stephanie Huynh of North Carolina

Today we’d like to introduce you to Stephanie Huynh.

Hi Stephanie, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
In 2001 Shoto opened it’s doors, a long time dream of then owners Chi and Tien Huynh. After coming to the US from war-torn Vietnam, falling in love, and starting a family in Charlotte, they chose to create a legacy here on Main Street in Lexington, passing the business on to the next generation, their sons Jimmy and Daniel, in 2008. Together with their wives Rose and Stephanie, the Huynhs work together to provide a casual full-service experience with a family centered atmosphere at the heart of Lexington Uptown

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Owning a business is never a smooth road, but being able to overcome challenges with family has been a blessing. Being able to lean on each other’s strengths as different difficulties arise has allowed us to survive recessions, pandemics, staff turnover and small town drama.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
We have built a reputation for family-friendly environment and quality food, including “Mama Chi’s Chicken and Cheese Eggrolls” and Chef Daniel’s Burgers. Above the restaurant, we have a Neon Speakeasy where you can sample Jimmy The Bartender’s handcrafted cocktails.

Any big plans?
We are bringing Asian culture to Lexington, NC by teaming up with the local Arts Council, Arts Davidson County, and starting a Lunar New Years tradition in a small town.
