Conversations with Michael Saunders

Today we’d like to introduce you to Michael Saunders.

Hi Michael, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I started in the restaurant business when I was 14 washing dishes and doing simple prep. Over the next 25 years, I’m now an Executive Chef. I love food and it is truly my passion. I’ve worked in all types of kitchens, Hotels, Country Clubs, Short Order, Fine Dining and high-volume Steak Houses. I’ve worked very, very hard and have learned the restaurant business from the inside out. I’ve been a host, food runner, server, bartender and service captain. All this experience has gotten me to where I am today, a successful small business owner of nine years now.

I started Just One More Bite in October of 2012. The goal and focus was to provide a farm to table restaurant quality meal that families and individuals could enjoy in their own homes. We focus on NC products in any and every single way we can use them. Now nine years later, we have a very loyal following and I get to do what I love without the stress of running a restaurant. We get to help families spend more time together at the end of the day, we help people lose weight and learn how to eat cleaner, we help athletes get stronger and faster and also bring awareness to the qualities of eating healthy. Overall the personal chef touch we provide is very rewarding and gives not only myself but our clients better quality of life!!

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It has not been a smooth road at all and probably never will be. At the very beginning, we basically created a market for upscale prepared meals. Introducing that to the Triangle area was and is a lot of work. Some of the struggles were finding and paying for commercial kitchens that were equipped to handle what I needed. Deliveries are and always will be a struggle. Delivery vehicles are expensive and trying to match our client’s needs and times on delivery day has always been a bit complicated. Overall we have a process in place that works and things run smoothly.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
My work as the Executive Chef of Just One More Bite is to provide our clients with the freshest, highest quality, locally sourced meal I possibly can. We are known for the most creative and true chef-inspired meals out there especially in Raleigh, NC. I’m most proud of the meals we provide every week to our clients, even after nine years our quality has never been compromised!! It is in the variety, quality and consistency of our meals week after week is what truly and clearly sets us apart.

What sort of changes are you expecting over the next 5-10 years?
In the industry of prepared and delivered meals, I see it / us thriving and continuing to grow. Especially post Covid the demand for delivered meals is more popular than ever!! However, quality and consistency will prevail!!
