Today we’d like to introduce you to Candelaria Vizcarra Casas

Hi Candelaria, we’d love for you to start by introducing yourself.
Our story begins in our home country, Mexico. As a young woman raised on a farm, I learned to make authentic Mexican dishes from scratch. When I met my husband and moved to the United States, I brought these techniques with me and passed them on to our daughter.

Over the years, my passion for cooking and sharing my dishes with loved ones, neighbors, and our community grew. The dream of opening my own food truck began to seem more achievable.

In September of 2023, we launched Tacorriendo, an authentic Mexican food truck. As we approach our one-year anniversary, the excitement and possibility of expanding this dream are becoming clearer than ever.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
No, it has not been a smooth road. We’ve had to navigate educating consumers about our dishes, weather conflicts that results in low sales, and internal business structures!

Alright, so let’s switch gears a bit and talk business. What should we know?
Most of our dishes are homemade! Nightly, we prep our full menu and daily specials that change every day to bring new plates to our consumers.

We are so proud of our name. People read it, laugh/smile, and recall it at first sight!

Is there something surprising that you feel even people who know you might not know about?
The name Tacorriendo translates to “taco running” which encompasses the taco truck is running and the owner’s daughter’s favorite hobby – running.

Our food truck is also female-owned and run! Behind the window, you’ll find my best friends and family.
