Hidden Gems: Meet Sharon Fan of Green Onions Bistro

Today we’d like to introduce you to Sharon Fan.

Hi Sharon, thanks for joining us today. We’d love for you to start by introducing yourself.
My name is Sharon Fan, and I graduated from NC State University in 2012. Initially, I wanted to pursue a profession in the medical field, but my whole mindset changed when I started thinking about money. Yes, my mind was flooded with thoughts about money! I was broke coming out of college and was living pay check to pay check, and I didn’t want to go into more schooling to end up in debt and broke again. I really self-doubted and wondered if the medical field was right for me. I believe that was the turning point in my life that allowed me to look at my life as a whole. After that, I tried many new things such as pharmacy technician, product development and sourcing, nail technician, potential franchisee, etc. I loved all my jobs and experiences, but it just wasn’t fulfilling. I wanted something I could own and feel accomplished from doing, and that’s when I had a light bulb moment that I would run my food truck! Oh…don’t get me wrong, it is hard work! I worked on this on-and-off for 1+ years because I chickened out at times. I had to be the one to pep talk myself to keep going because I had a vision of seeing myself running my own business.

Green Onions Bistro is the name of my food truck. We mainly serve Asian/Hispanic fusion cuisines. As a foodie, I love to try different ethnic food and revamp it in my own way, which I called it “The Sharon Style.” I noticed that many ethnic cuisines love to garnish with something green. It may be the look, taste, color, etc., Green onions is a widely used garnish, and it resonates with me because, in a way, it connects the cultures just through this vegetable. Plus, green onions are so easy to plant and grow. I hope the name Green Onions will eventually “grow on people,” and my food will bring them a sense of togetherness.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Nothing is easy. I have worked on the food truck for about a year and a half. There was so much self-doubt and wanting to quit. However, I kept visualizing myself running the truck and how I felt and looked. I felt happy and was smiling. That was what I wanted! This glimpse of the future kept me going. Sometimes you have to imagine what success looks like to push yourself forward. You can’t assume what hasn’t happened yet, so self-doubting will only sabotage you from trying to be great. The funny thing is that as I write this, I was that person who did it, and now I am telling people about it. On top of self-motivation, I couldn’t have gotten where I am today without the help of my friends and family and the people who came in and out of my life. I am truly grateful for all of them.

Green Onions Bistro is an Asian/Hispanic fusion food truck. We serve innovative meals such as dumplings, tacos, noodles, burritos, and more. What sets our food truck apart from the others are the individuality and value we hold. We handmade all of our dumplings, and braise our birria beef for hours because we want our customers to know that food truckers do value our customers. As a new truck in town and a female entrepreneur, I want to thank our customers for being supportive and patient with us. As well as bulk orders where we vacuum seal our dumplings for customers to purchase.

What would you say has been one of your most important lessons?
You are never alone. There are people who loves you and want to help. Please let them know. At the same time, don’t let others’ opinions sway you in another direction when your gut feels right. You have to trust yourself and that you can succeed in doing whatever you put your heart to. Also, it is all right to make mistakes that makes us normal and human. How can we be great at what we do without reflecting on our mistakes and learn from it. Stay positive and envision your success this way you will never lose track of what you want, have faith in yourself and it will work out.
