Meet Brittany & Michael Sacco of New Bern

Today we’d like to introduce you to Brittany & Michael Sacco.

Hi Brittany & Michael, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Hello to sum us up: Rooted in passion. Crafted with purpose. Shared with love.

What started as a small dream in our foodie heads, has blossomed into something truly special.

At the heart of Bear & Boards is Brittany, our culinary artist and the creative force behind every board. With a background in the culinary arts and an eye for design, she transforms premium ingredients into edible art. Each board is carefully hand-crafted to delight the eyes as much as the palate. Her passion for, food, culture, flavor, presentation, and meaningful gatherings shine through in every creation.

By her side is Mike, whose business, management and marketing expertise keeps everything running seamlessly. Together, we’ve found the perfect balance of flavor and function, a partnership that blends Brittany’s artistry & passion with Mike’s organization and vision. He encourages her at every turn and is here to support her through all the ups and downs.

As proud parents of three, ( soon to be 4) we know that life’s sweetest moments often happen around good food and great company. That belief is what drives Bear & Boards: to create beautiful, fresh, and memorable charcuterie experiences that bring people together.

We’re deeply rooted in our New Bern community and make it a priority to collaborate with local farmers and artisans, showcasing the incredible flavors our region has to offer. By supporting local businesses, we’re not just crafting charcuterie we’re celebrating the people and stories behind every ingredient.

We have started off as a small business and are steadily growing followers and amazing clients. We hope to someday soon have our own brick and mortar and take our business to the next level. Where we plan to collaborate and share our space with the amazing small businesses and entrepreneurs in our area. We have so many ideas and cannot wait to make them a reality!

Thank you for being part of our story and for helping us share a taste of our dream one beautiful arrangement at a time.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
When we first started, we believed that the community of small businesses around us would lift one another up, and while many did, there were times when support we were promised never came. It was a tough reality check, but it also taught us resilience, self-reliance, and the importance of building genuine connections.

Operating out of a shared kitchen and commissary instead of having our own brick-and-mortar space has also been a learning experience. It’s required a lot of coordination, creativity, and adaptability, especially as we’ve grown and expanded our offerings. Managing overhead while maintaining the level of quality and presentation our clients expect has been a delicate balance.

Behind the scenes, there’s a lot more that goes into every board than people often realize, from sourcing premium ingredients, prepping everything by hand, designing each layout, handling deliveries, and ensuring every order meets our standards. The time and care we put into each detail can be exhausting, but it’s also what makes our boards so special.

And of course, doing all of this while raising a family of three means every day is a balancing act. There are late nights, early mornings, and moments where the business and family life blend together. But at the end of the day, the joy we get from seeing our boards bring people together makes every bit of it worth it.

Can you tell our readers more about what you do and what you think sets you apart from others?
We specialize in creating elevated, handcrafted charcuterie experiences that are as beautiful as they are delicious. Every board is thoughtfully designed by hand no templates, no shortcuts just pure creativity and attention to detail. Our boards feature premium, fresh ingredients and are styled to bring that “wow” factor to any occasion, whether it’s a cozy night in, a wedding, or a large-scale corporate event.

We’re known for our stunning presentation and high-end feel, but also for the personal touch behind every board. We take pride in getting to know our clients and customizing boards that fit their event style, theme, and personality. From our themed charcuterie carts to our signature boards filled with local favorites, every item we create is meant to spark conversation and connection.

One thing that really sets us apart is that we don’t just make charcuterie we craft an experience. Every detail, from ingredient selection to board styling, is driven by passion and a fine-dining mindset that Brittany brings to the table. We also are meticulous on every detail including communication with our clients from start till we deliver the order. We provide updates and professional emails, calls and communication every step of the way and that’s where mike comes in.

What we’re most proud of is how far we’ve come. We’ve built this business from the ground up — out of a shared commissary kitchen, with no brick-and-mortar storefront. We used what we had and stay resourceful to become what you see today.

What are your plans for the future?
Our biggest plans are getting our very own brick and mortar and expanding our business.(which we are in the process of) We are looking forward to involving others who are just as passionate about charcuterie and experience as we are! We are also very excited to be able to support and collaborate with small businesses in our locations!
