Hi Jennifer, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I grew up on Long Island where clams were a family favorite, but I didn’t discover my love for oysters—or cooking—until college in North Carolina. What started as late-night Food Network marathons turned into a passion, then a side hustle, and eventually a full-blown oyster business.
Today, I’m a nurse-turned-entrepreneur bringing a fresh, interactive oyster experience to North Carolina—one half-shell at a time. It’s about more than great food. It’s about community, sustainability, and creating moments people remember
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
I’ll be honest—it hasn’t always been a smooth ride. One of the biggest challenges early on was navigating health department regulations. What I’m doing—bringing oysters to the streets in a unique and interactive way—isn’t something you see every day in North Carolina. There wasn’t really a blueprint for a business like mine, so a lot of the time, it felt like I was hitting roadblocks just trying to figure out how to do things the right way.
What made it even more frustrating was knowing that in other states, similar concepts were already up and running without nearly as much red tape. I kept thinking, “This works there—why is it so hard here?” But instead of letting that discourage me, I used it as fuel. It pushed me to ask more questions, do more research, and advocate for what I believed in.
Working through the permits, compliance issues, and constant back-and-forth wasn’t easy. But those challenges shaped me. They taught me how to stay patient, how to push forward with persistence, and how to stand by my vision even when the road wasn’t clearly marked.
In the end, all those hurdles made me stronger—and more determined to keep paving the way for something new and meaningful
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I bring chargrilled oysters to the streets of North Carolina—how many people can say that? It’s a one-of-a-kind experience, and I’m proud to serve up something truly special wherever I go.
But for me, it’s about more than just good food. One of the things I care most about with my oyster bar is sustainability. There’s something incredible about knowing that every oyster shell I collect can be recycled and returned to the water—where it helps build reefs, support new oyster growth, and keep the ecosystem thriving. It’s a full-circle moment, and it feels amazing to be part of something that gives back to the environment while bringing people together.
I’m also passionate about education. By trade, I’m a diabetes educator, and I’ve spent years helping people take control of their health through knowledge. That background has shaped the way I run my oyster business too. I don’t just want to serve oysters—I want to share them. Their history, their flavor profiles, their impact on the environment… there’s so much more to oysters than most people realize, and I love opening people’s eyes (and taste buds!) to all of it.
At the end of the day, whether I’m working in healthcare or shucking oysters, my mission is the same: empower people, educate communities, and support a more sustainable future. That’s what I’m all about—and that’s what keeps me going
Is there anything else you’d like to share with our readers?
I get a real kick out of sharing our oyster experience from the food truck—we pop up at local breweries, wine bars, and festivals, and it’s always a blast!
Okay, confession time: I’m completely smitten with our Half-Shells oyster bar catering service. We take the show on the road—bringing a hands-on, interactive oyster experience to weddings, private parties, and corporate events. I’ve even had the chance to cater a few oyster roasts and shucking competitions… and let me tell you, they’re an absolute good time.
That’s the whole story in a nutshell—or should I say, a half-shell!
