Meet Jonathan Blitz of Mystic Farm & Distillery

Today we’d like to introduce you to Jonathan Blitz

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Mystic began in 2013 when Mystic Bourbon Liqueur, a blend of bourbon, wildflower honey, and 9 spices, hit the market. This handcrafted spirit quickly grew, and the business needed a home. The founders purchased a 22 acre farm property on the East side of Durham and began producing pot distilled bourbon from the crisp water in the aquifer below the distillery, grain grown by the owners on leased acreage nearby, and aged in seasoned North Carolina white oak. The business has grown to produce 6 barrels of fine bourbon per week.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
COVID presented a serious challenge to the distillery, but the team responded to the community’s need for alcohol based hand sanitizer, producing medical grade product and selling to hospitals, schools, the military, and many other businesses and institutions nationwide.

We’ve been impressed with Mystic Farm & Distillery, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Mystic Farm & Distillery crafts the Piedmont’s superior grain, water and aging climate into the world’s finest bourbon and other spirits. Mystic’s Broken Oak bourbon was selected as 2023’s Best 5 Year Small Batch Bourbon at San Francisco World Spirits Competition. In 2024, Mystic’s Bottled in Bond bourbon was awarded a Gold Medal in the hyper-competitive bottled-in-bond class and Broken Oak was again awarded a Double-Gold and selected as the Best 6 to 9 Year Small Batch Bourbon. Mystic’s other offerings are routinely ranked among the best in the world by critics and enthusiasts.

Every Mystic bourbon begins with corn and other grains grown on leased land around Hillsborough, North Carolina. Mystic then mashes the grain with the pure water drawn from the ancient aquifer under the distillery, using a painstaking process including grain-in fermentation and pot distillation with all cuts performed by highly-skilled distillers using taste and smell. Each North Carolina oak barrel is toasted and charred to Mystic’s exacting specifications and aged for years in the aging climate afforded by the ever-changing weather unique to the Piedmont region. Barrels are aged to maturity, not a date, with barrel selections made by Mystic’s founders in a painstaking process that produces perfectly balanced bourbons awarded the top honors in the world’s most prestigious competitions.

What has been the most important lesson you’ve learned along your journey?
There are no shortcuts to quality. We are obsessive about every detail, because the process determines the product.
