Meet Thomas Gavin of Fat Cat Homemade Ice Cream

Today we’d like to introduce you to Thomas Gavin

Hi Thomas, thanks for joining us today. We’d love for you to start by introducing yourself.
We started with a dream of owning an ice cream truck, inspired by chasing the ice cream man through town. This idea evolved into creating unique ice cream recipes and selling them from our home. In 2019-2020, we converted a room in our home and with proper inspections we were on our way to selling our ice cream to our neighbors and friends. Despite our desire to open a brick-and-mortar store, we had to wait due to the pandemic. After three years of nurturing our dream, we finally began searching for the perfect location in Fuquay-Varina last year.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The struggle was real. With COVID shutting everything down and the challenge of finding the perfect location, it took years. As a start-up, many landlords were hesitant to take a risk on us. Thankfully, we met the owners of Bolt, who took a chance and allowed us to share their space.

We’ve been impressed with Fat Cat Homemade Ice Cream, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
At our ice cream store, we pride ourselves on making our ice cream in-house using the finest ingredients. Our commitment to quality is evident in every flavor. For example, our cookie dough ice cream features real homemade cookie dough pieces. Our Blueberry Crumble is made with a scratch-made blueberry compote, and our salted caramel ice cream is enhanced by my own homemade salted caramel sauce.

Understanding the diverse needs of our customers, we also offer a range of dairy-free flavors that go beyond traditional sorbets and fruit flavors. Our goal is to always have at least six dairy-free options available. Some of our popular dairy-free flavors include DF-GF Cookies and Cream, DF-GF Banana Pudding, DF Cookie Butter, DF-GF Brownie Batter, Dairy-Free Cotton Candy, DF-GF Birthday Cake, and DF Mint Chocolate Chip.

Additionally, we offer dairy-free milkshakes and sundaes to ensure that the dairy-free community feels included and satisfied at our store. We’re constantly experimenting with new flavors to keep our menu exciting and inclusive for everyone.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
I see the ice cream industry evolving to meet the diverse needs of the community, including offering dairy-free, gluten-free, and sugar-free flavors.
